Ingredients
- 1 lb zucchini (about 2 med), coarsely grated
- Kosher salt
- Ground black pepper
- 1 large egg
- 2 scallions, finely chopped
- 1/2 cup whole wheat flour
- 1/2 cup olive oil
- Sour cream or plain yogurt (optional)
- 2 cloves roasted garic
Preparation
Step 1
Salt the zucchini with about 1 teaspoon salt to remove excess water. Let sit in colander and squeeze (push down) with kitchen towel to drain.
Whisk egg in large bowl; add zucchini, flour, scallions, 1/4 teaspoon pepper, garlic. Mix to combine well.
Heat oil in large skillet over medium heat. Drop fritter mixture into skillet (2 Tablespoons each). Flatten slightly cook until golden brown on both sides. Transfer to paper lined plate. Sprinkle with salt & pepper to taste.
Serve warm with sour cream or yogurt if using.
