Nutty pb &j squares

Ingredients

  • 3/4 c salted,roasted peanuts
  • 1 c all purpose flour
  • 1/2 c whole wheat flour
  • 3/4 c packed light brown sugar
  • 3/4 tsp salt
  • 1 stick unsalted butter, chilled and cut into pieces
  • 3/4 c creamy natural peanut butter
  • 1 tsp vanilla extract
  • 1 c all fruit

Preparation

Step 1

1) position rack in centre of oven and preheat to 350. line an 8" square baking pan with parchment paper letting some excess hang over edges

2) pulse peanuts in food processor til chopped and transfer to a bowl

3) mix flours, sugar and salt in processor. add butter and pulse til a coarse mixture. add pb and vanilla and process til crumbly. add 3/4 of crumb mix to bowl of peanuts.

4) dump remaining mixture into prepared pan and pat down firmly. cover with all fruit and spread to 1/2" of the edges. sprinkle crumb mixture on top, going all the way to edges of pan.

5) bake til top is golden brown and fruit is bubbling, about 45 minutes. if it browns too quickly loosly cover top with foil. transfer apn to a cooling rack

6) grasp parchment and gently lift out of pan. place on cutting board and cut into squares
