  • 3/4 cup Crisco Shortening
  • 1/4 cup Sugar
  • 1/4 tsp. Salt
  • 1/4 tsp. Almond extract
  • 2 Eggs - SEPARATED
  • 1 1/2 cups All Purpose Flour
  • 1 cup Red Raspberry Jam
  • 1/2 cup Flaked Coconut
  • 1/2 cup White Sugar



Step 1

Preheat oven to 350 degrees. Cream shortening, salt and 1/4 cup sugar, until fluffy. Blend in almond extract and egg yolks. Mix in Flour. Pat dough into ungreased 13 x 9 x 2 inch pan (use parchment paper). BAKE 15 MIN.
Spread hot crust with jam, top with coconut. Beat Egg Whites until foamy, gradually beat in 1/2 cup sugar, until soft peaks form. Spread over coconut.

Bake 25 min. COOL completely on rack. Cut into 2 doz. bars.
