Ingredients
- Mango Salsa:
- ◦1 cup bread crumbs
- ◦1 teaspoon Caribbean (Jerk) seasoning
- ◦1/4 cup Hellmann's Light Mayonnaise (or any of their varieties)
- ◦1 lime, juiced & zested
- ◦1 pound boneless skinless chicken breasts
- ◦1 large (or 2 small) mangos, finely chopped
- ◦1/4 cup red onion, finely chopped
- ◦1/4 cup cilantro, chopped
- ◦1 teaspoon jalapeno, minced
- ◦1 lime, juiced & zested
- ◦1 teaspoon olive oil
Preparation
Step 1
1.Preheat oven to 425 degrees F. Place a metal cooling rack on top of a baking sheet and coat rack very lightly with nonstick spray (or line a baking sheet with parchment paper or nonstick aluminum foil).
2.Combine bread crumbs and seasoning in a shallow dish; set aside.
3.Mix together mayonnaise and juice/zest from one lime in a resealable bag or large bowl. Add chicken and mix to coat.
4.Lightly coat chicken in bread crumbs then place chicken on prepared pan. Bake chicken for about 20-25 minutes at 425 degrees F or until golden brown and crispy.
5.Meanwhile, prepare salsa by combining all salsa ingredients in small bowl and mix to combine. Serve salsa, rice, and/or beans with chicken as desired.
