Ingredients
- 3 acorn squashes
- 12 oz. bulk pork sausage
- 1/4 cup chopped onion
- 1 1.2 cups golden delicious apples, cored and chopped
- 1/4 tea. ground sage
- 1/4 tea. thyme
- 1/8 tea. pepper
- 1/8 tea. salt
- 1/2 cup chopped pecans
Preparation
Step 1
Preheat oven to 3560 degrees.
Halve squash and remove seeds. Place, cut side down, in a 9x13 dish. Add small amount of water to cover bottom and bake for 45 minutes.
In a large skillet over medium-high heat, cook sausage and onion until browned and crumbly. Drain excess fat. Add apples and seasonings. Cook 5 minutes longer. Turn squash cut side up and discard water. Fill squash cavities with apple/sausage mixture. Sprinkle with pecans.
Cover with foil and bake for 30 minutes or until squash is tender.
