See's Potato Candy

Ingredients

• 2 large potatoes
• 2 1/2 pounds coconut (very fine)
• 4 – 5 packages powdered sugar
• 1 pound chopped walnuts
• 1 tablespoon vanilla
• 1/4 pound butter

Preparation

Step 1

Boil potatoes or bake and mash, beat in butter add 1 pack powdered sugar (sugar will make it watery) add vanilla.
Add about 1 pound coconut and chopped walnuts add one more pound of sugar and coconut alternately until consistency of a soft cookie dough.
Shape.
Frost with chocolate
