Oatmeal Banana Breakfast Cookies

An easy and hearty breakfast on the go! Of course you can substitute/add anything you want to the basic ingredients. I am on a Craisins kick so I added Cherry ones and they add a great zing to the cookies. The texture is somewhat like a moist breakfast bar. Very chewy and tender. I made big cookies but you could use a smaller scoop and make kid-size servings.

Ingredients

  • 1/3 c. butter softened
  • 1/4 c. brown sugar
  • 2 c. old fashioned oats
  • 1/2 c. craisins or raisins
  • 1/4 c. pecans (optional)
  • 1 t. vanilla
  • 1/4 c. milk
  • 2 very ripe bananas

Preparation

Step 1

Preheat oven to 350 degrees.
Mix all ingredients together.
Let stand for 10 minutes.
Drop level scoops onto cookie sheet. (I used a 2 in. scoop)
Bake 15 - 20 min. until lightly browned.
Cool 5 minutes on cookie sheet and then remove to cooling rack.

Notes
Shorten baking time if you use a smaller scoop.
