Wheat Berry Yogurt Salad

This is a very textured, creamy and light salad made with wheat berries which are high in fiber, protein and iron - the ultimate whole grain.

Ingredients
- 1 cup dry wheat berries
- 1 cup non-fat greek yogurt
- 1 yellow bell pepper
- 1 red bell pepper
- 1 orange bell pepper
- 2 Carrots
- 1 small red onion
- 1/2 cup chopped fresh mint
- 1/4 cup Lemon Juice
- S & P to taste

Preparation
Step 1
Cook wheat berries in about 3 1/2 cups water (add more as you are cooking if needed). Cool cooked wheat berries and put in a bowl. Add Chopped bell peppers, carrots, and onion. in a separate bowl combine yogurt, lemon juice, mint, salt and pepper. Combine two mixtures - serve with lemon zest.
