Beef and Barley Soup

Ingredients

  • 3/4 beef stew meat diced into 1/4 inch pieces
  • 1/3 cup pearl or pot barley
  • 14 oz canned tomatoes with juice, broken up
  • 1 tsp liquid gravy browner
  • 7 cups water
  • 1 cup finely shredded cabbage
  • 1/2 cup thinly sliced carrots
  • 1/2 cup thinly sliced celery
  • 1 cup chopped onion
  • 1 tbsp beef bouillion powder
  • 1/2 tsp salt
  • 1/5 tsp pepper
  • 1/2 tsp parsley flakes
  • 1/2 tsp dried sweet basil

Preparation

Step 1

Combine beef, barley, tomatoes with juice, gravy browner and water in large pot or Dutch oven. Simmer, uncovered for 1 hour. Skim off foam as needed. Add remaining 10 ingredients. Stir. Simmer, uncovered, stirring occasionally for about 40 minutes.
