Zucchini Nut Bread

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 cup whole wheat flour
  • 2 tsp baking soda
  • 1 cup white flour
  • 2 cups raw zucchini, grated and firmly packed
  • 1/4 tsp baking powder
  • 1 tbsp cinnamon
  • 1 tsp allspice
  • 1 tsp salt
  • 1 cup coarsely chopped walnuts
  • 2 tsp vanilla extract

Preparation

Step 1

Beat eggs until light, add sugar, oil and zucchini. Add all dry ingredients that are sifted together and mix. Add Vanilla and nuts. Pour into greased and floured loaf pans. Bake at 350 for 1 hour or until done in middle.
