Ingredients
- 12 oz linguini; cooked according to directions and reserving 1/2 C pasta water
- 2 T olive oil
- 3 small zucchini cut into thin half moons
- Salt
- 15 oz can chickpeas (garbanzo beans), drained and rinsed
- 2 cloves garlic, sliced
- 1/4 C crushed red pepper
- 1/2 C grated Parmesian cheese
Preparation
Step 1
- While pasta is cooking, heat oil over medium heat add zucchini and salt to taste; cook until just tender - 4 -5 min.
- Add chickpeas, garlic, red pepper and heat through
- Toss with pasta, reserved pasta water and 1/4 C cheese
- Divide into 4 portions and sprinkle with remaining 1/4 C cheese
