Preparation
Step 1
**Prefreeze ice cream tub according to your instructions.**
Apples
Combine apples, brown sugar, cinnamon, and water in a medium sized saucepan. Cook over medium high heat until the apples are soft and the sauce has thickened (about 15-20 minutes). Set aside to cool.
Ice Cream
Combine ice cream ingredients in ice cream tub. Churn in ice-cream maker until light, fluffy, and frozen. When ice cream is almost done, spoon 1/3 of the apple mixture into the ice cream and let it continue to churn until its completely done.
In a large, freezer safe container, spoon 1/3 of ice cream into container. Top with 1/3 of remaining apples. Continue layering, ending with apples on top. Cover and place in freezer for 6 hours or overnight.
Crust
Preheat oven to 375F. Roll out your favorite pie crust into a thin rectangle shape. Using a pizza wheel, cut dough into small rectangles (about the size of half a graham cracker) or triangles (about the size of a sandwich triangle).
Carefully move dough onto a cookie sheet sprayed with non-stick cooking spray. Brush melted butter on each dough piece and sprinkle liberally with cinnamon and sugar. Bake for 10 minutes or until golden brown.
Let cool completely.
Assembly
Let ice cream soften a little bit and then scoop some onto the a piece of crust (place cinnamon side down, then add ice cream). Top with another piece of crust, cinnamon side up.
Return to freezer for eating later or go ahead and enjoy now!
