Ingredients

  • 4 large onions, finely chopped
  • 2 green peppers, finely chopped
  • 6 cloves garlic
  • 1/4 cup olive oil
  • 1/4 pound butter
  • 2 16 ounce cans stewed tomatoes, with juice
  • 1 bottle chili sauce
  • 2 small cans tomato sauce
  • 1 teaspoon worcestershire sauce
  • 1 bay leaf
  • 1 tablespoon chopped parsley
  • 3 whole cloves
  • 1/2 teaspoon saffron
  • 1/2 teaspoon paprika
  • pinch of thyme
  • salt and pepper to taste
  • 1/2 cup sherry
  • 1 cup white wine

Preparation

Step 1

In a large sauce pan, add the olive oil and the butter, saute the onions, green peppers and garlic until tender.
Add the stewed tomatoes and juice, tomato paste, chili sauce, tomato sauce, worcestershire sauce, bay leaf, parsley, clove, saffron, paprika, thyme and salt and pepper.
Cook slowly for 1 1/2 hours, stirring occasionally. Add the sherry, wine, and continue to cook slowly for another 1 1/2 hours.
