Ingredients

  • 1 Yellow Summer Squash
  • 1 Green Summer Squash
  • 1 Red Bell Pepper
  • 1/2 Small Red Onion
  • 1 Cup Chopped Sugar Snap Peas
  • 1/2 Cup Pineapple
  • 1/4 Cup Chopped Basil
  • 4 Cups Arugula
  • 1/4 Cup Fresh Lime Juice
  • 1/4 Cup Pomegranate Juice
  • ~ 1 or 1.5 tbsp Extra Virgin Olive Oil
  • 1 Tbsp Agave Nectar

Preparation

Step 1

Cut Squash, Bell Pepper and Red Onion and Pineapple into small pea-sized pieces (time consuming but WORTH IT). In a separate bowl first combine Lime Juice, Pomegranate Juice and Agave. Slowly add Olive Oil while whisking. Add the first 6 ingredients to dressing mixture and let sit for about 5 minutes.

Place 2 cups of Arugula on each plate and add the Salad mix to top. Finish with Basil sprinkled on top and the last of the dressing.
