Pan-Roasted Pork Tenderloin with Mustard-Maple Glaze

If the tenderloins are larger than 1 pound, you will need to increase the roasting time accordingly. The glaze requires no cooking, but may be warmed in the microwave on high for 30 seconds to 1 minute.

  • GLAZE:
  • 2 pork tenderloins (1 pound each), trimmed
  • salt & ground black pepper
  • 1 Tbsp. vegetable oil
  • 1/2 c. pure maple syrup
  • 2/3 c. whole-grain mustard
  • 1 Tbsp. balsamic vinegar
  • salt & ground black pepper

Step 1

1. Adjust oven rack to upper-middle position & preheat to 475ºF.
2. Pat tenderloins dry with paper towels & season with salt & pepper. Heat oil in 12" nonstick skillet over medium-high heat until just smoking. Brown tenderloins on all sides, about 5 minutes total.
3. Transfer skillet to oven & roast pork until thickest part registers 140ºF, 18 to 20 minutes.
4. Whisk maple syrup, mustard, & vinegar together & season with salt & pepper to taste. Set aside.
5. Transfer tenderloins to carving board, tent with foil, & let rest until thickest parts reach 150ºF, about 5 minutes. Cut crosswise into thin slices & serve with glaze.
