Barbecued Black Beans and Rice

Ingredients

  • 1 c rice
  • 2- 16oz cans black beans, drained
  • 1- 14.5oz can stewed tomatoes
  • 1- 4oz can chopped green chilies
  • 1- 11 can corn or 10oz frozen
  • 2 Tbsp barbecue sauce, or more to taste
  • 3/4 tsp ground cumin, or to taste

Preparation

Step 1

1. Put beans in medium-sized saucepan and add tomatoes, chilies, corn, barbecue sauce, and cumin. Cook on for 10 minutues.

2. Spoon rice into bowls and ladle on black bean mixture
