Ingredients

  • 1 cup vegetable oil 1/3 cup vinegar
  • 1/4 cup minced fresh parsley
  • 3 tablespoons minced fresh basil or 1 tablespoon dried basil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon garlic powder
  • 1 medium sweet onion, thinly sliced
  • 6 large tomatoes, thinly sliced

Preparation

Step 1

Mix the first 9 ingredients. Layer onion and tomatoes in a shallow glass dish and cover with marinade. Cover the dish and refrigerate for several hours. Serves 12.
