Ingredients
- 8 cups rhubarb cut into 1/2 inch pieces
- 2 cups chopped onion
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1/3 tsp allspice
- 1/2 cup vinegar
- 2 cups sugar
- 1 1/2 tsp salt
Preparation
Step 1
Place all ingredients into a large heavy pot. Place on heat and bring to a boil. Reduce heat to simmer and cook uncovered on low heat, stirring frequently. Cook until onions become transparent and mixture begins to thicken. Pour into hot sterilized jars and seal. Nice accompaniment for red meats.
