Ingredients
- 2 cups cooked chicken, chopped in bite-sized pieces (I use a Rotisserie chicken)
- 1 bag (16 oz) frozen mixed vegetables, thawed
- 1 jar (12 ounces) chicken gravy or 1 (10 oz) can cream of chicken soup
- 2 cups cheddar cheese, shredded
- 1 cup Bisquick original baking mix**
- 1/4 cup milk (if using cream of chicken soup, increase to 1/2 cup milk)
- 1/4 teaspoon dried thyme
- 2 eggs, slightly beaten
Preparation
Step 1
Pre-heat oven to 375F. In a large sauce pan, mix together vegetables, chicken and gravy and bring to a boil. Stirring frequently. Remove from the stove and set aside.
Meanwhile, stir together the cheese, Bisquick, milk, thyme, and eggs.
In an ungreased 2 1/2-quart casserole dish, pour and spread out the chicken mixture. Spoon the batter mixture over the top of the chicken mix. If desired, lightly sprinkle cheddar cheese on top.
Bake uncovered for 35-40 minutes or until golden brown. Let stand 5 minutes before serving.
