Ingredients

  • 2 lbs. Boneless, Skinless Chicken Breasts
  • 1 lb. Smoked Sausage, cut into slices/halves
  • 1 Onion, chopped
  • 1 Orange or Red Pepper, chopped
  • 3 Stalks Celery, chopped
  • 1 28 oz. Can Diced Tomatoes (including juice)
  • 3 Cloves Garlic. chopped
  • 1 c. Chicken Broth
  • 1 T. Cajun/Creole Mix
  • 1 t. Thyme
  • 1 t. Oregano
  • 1 lb. Shrimp
  • 4 Servings Rice

Preparation

Step 1

Cut up all vegetables, chicken, sausage, spices, broth, garlic and tomatoes and place into cooker. Set pressure cooker to the High Setting and cook for 30 minutes. After starting cooker, cook rice. When cooker is at about 10 minutes left, cook shrimp in pan with olive oil until pink. Stir rice and shrimp into cooker and enjoy!
