Bacon-Cola Crock Pot Roast

Ingredients

  • 1 (3 to 4 lb.) bottom round beef roast
  • 1 can cream of celery or cream of mushroom soup
  • 1/2 lb. bacon, cooked and crumbled (save the bacon grease)
  • 3-5 T bacon grease
  • 1 pk. dry onion soup mix
  • 1 (12 oz.) can cola
  • 1 T corn starch and 1 T. water, mixed together

Step 1

Spray the crock with non-stick cooking spray. Pour cola into the crock, and set temperature on low. Place the roast in the crock pot, and sprinkle the dry onion soup mix over the roast and cola. Drizzle the bacon grease over the roast, then spread the crumbled bacon over the roast. Cover and cook on low for 6-8 hours or 4-6 hours on high.

One hour before roast is to be served, prepare the gravy.

Lift roast out of crock pot and set aside. Add the soup to the crock mixture and whish until well-blended. Add the corn starch and water mixture and whisk it to thicken. Return roast to crock, cover and continue cooking until cooking time is complete.

Serve the roast and gravy over mashed potatoes.
