Homemade Lentil Soup

Ingredients
- 1 lb. Lentils
- 8 cups Water
- 1 cup cubed Ham Steak
- 1 cup Chopped Celery
- 1 cup Chopped Carrots
- 2 cubes Chicken Bouillion
- 1 clove Garlic
- 1 medium Onion
- 1/4 tsp. Ground Thyme
- 1/2 tsp. Parsley
- 1 pinch Cayenne Pepper
- 1 Bay Leaf
- Salt
- Pepper

Step 1
Wash and sort lentils and let soak overnight. Chop glove of garlic, onion, celery and carrots and sautee in a large stock pot with 1/4 cup of oil (olive or Canola). Add cubed ham steak and let slightly brown. Add thyme, parsley, Cayenne pepper, salt and pepper.
Drain lentils and add to stock pot along with water, bouillion cubes and bay leaf. Bring to a boil and reduce heat, simmer for 45-60 minutes.
