Ingredients

  • 2 cups chopped cooked chicken breast
  • 1 cup canned black beans, drained and rinsed
  • 1 1/2 cup diced tomatoes
  • 1 cup whole kernel corn
  • 1/2 cup diced red onions
  • 1/4 cup chopped fresh coriander
  • DRESSING
  • 2 TBS lime juice
  • 1 TBS olive oil
  • 1/2 TSP each, ground cumin and sugar
  • 1/4 TSP each, salt and pepper

Preparation

Step 1

1. Combine fist 6 ingredients in a large bowl and mix well. In a small bowl, whisk together dressing ingredients.

2. Pour dressing over bean mixture and stir until evenly distributed. Cover and refrigerate until ready to serve.

**This salad tastes even better the next day and makes a great lunch.
