Ingredients

  • 2 T plus 1 cup butter, divided
  • 2 cups cashew halves
  • 2 cup flaked coconut
  • 2 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup plus 1 tsp water divided
  • 2 tsp vanill
  • 1 1/2 tsp baking soda

Preparation

Step 1

butter 2 15x10x1in pan each with 1 T. butter.
combine cashew and coconut on another 15x10 pan.. bake at 350* 10 min or until golden brown, stirring occasionally.
in a large heavy saucepan, combine sugar, corn syrup and 1/2 cup water. cook and stir over med heat til mix comes to boil. add remaing butter, cook and stir until butter is melted. continue cooking without stirring until candy thermometer reads 300*.
meanwhile, combine vanilla, baking soda and remain ing water. remove saucepan from heat. add cashew and coconut.. add baking soda mixture, stir til light and foamy. Quickly pour into prepared baking pans.. spread with buttered metal spatula to 1/4 in thickness. cool before breaking into pieces..
