Beer-Soaked Beef

Ingredients
- 12 ounces beer
- 2 tbsp. olive oil
- 1 garlic clove, peeled and smashed
- 2 tbsp lemon juice
- 1 tbsp brown sugar
- 1 tsp salt
- 1/8 tsp whole cloves
- 1 1/2 pounds raw lean flank steak, 1 inch thick, washed and patted dry

Step 1
In a 9 x 13 inch glass baking dish, combine beer, oil, garlic, lemon juice, sugar, salt and cloves. Add steak. Cover dish and marinate in refrigerator turning once or twice, for at least 2 hours up to 24 hours.
Use broiler or grill to cook about 3 to 4 minutes per side for medium rare, longer until desired doneness. Remove meat and cover with alumninum foil and let stand for 10 minutes.
Meanwhile, pour remaining marinade in a sauce pan, bring to a boil and cook until all the alcohol burns off, about 5 to 7 minutes.
Thinly slice steak against the grain and serve with sauce.
