Spaghetti with Vegetable Sauce

Ingredients

  • 1/2 lb ground beef
  • 1 onion, chopped
  • 2 zucchini, chopped
  • 1/2 c carrot, diced
  • 32 oz diced tomatoes
  • 8 oz tomato sauce
  • 6 oz tomato paste
  • 4 oz mushrooms, sliced
  • 1 t salt
  • 2 t oregano
  • 1 t basil
  • 1 t italian seasoning
  • 1/2 t garlic powder
  • 1/4 t pepper
  • 2 T Romano cheese
  • 3 c hot cooked spaghetti

Preparation

Step 1

1. Cook ground beef in a Dutch oven over med heat until browned. Drain meat and wipe drippings from pan. Reheat dutch oven over med. Add onion and saute until tender. Add zucchini and carrot and saute 5 min. Remove veggies and set aside

2. Combine meat and remaining ingredients, except spaghetti and cheese Simmer uncovered 30 min. Stir in veggies and cheese and heat through. Serve over spaghetti.
