Chicken Salad with green olives, celery, & green onion

Ingredients

  • 2 to 3 cups cooked chicken breast, shredded into bite-sized pieces
  • 1 cup diced celery (about 3 stalks)
  • 1 cup large green olives with pimento, chopped
  • 1/2 c. thinly sliced green onions (or less to taste)
  • 1/3 c. mayo
  • 1/3 c. light mayo
  • 2 tsp. green olive brine
  • 2 tsp. lemon juice
  • 1 tsp. dijon mustard
  • 1 tsp. celery seed (optional, but good)
  • salt and pepper to taste

Preparation

Step 1

Trim all fat and tendons from two chicken breasts, put them in a small pan with enough water to cover, bring to a low simmer and cook about 15 minutes. let chicken cool in the water, then drain.

Shred chicken, chop olives, slice green olives and chop celery

Combine mayo, light mayo, green olive brine, lemon juice, mustard, celery seed, salt and pepper - whisk together

In a medium sized bowl, combine chicken, celery, green onion. stir enough of dressing to moisten all ingredients. (you may not need all of it if you only have 2 cups chicken). Then gently fold in green olives, mixing just enough to distribute them amond the other ingredients. Chill and serve.
