Ingredients
- 1 20 oz. bag Simply Potatoes
- 2 T.+ butter
- 8 eggs
- 1 c. milk--not skim
- 2-3 c. grated cheese-1 pepper jack; 2 mild cheddar
- 1 c.+ chopped ham, sausage, smoked salmon or bacon--your choice
- 1 c. of some type of vegetable--onion, red/green peppers, asparagus are good choices--saute for a couple minutes before adding to egg bake
Preparation
Step 1
Preheat oven to 400.
Heavily butter a 9 x 13 pan, spread potatoes in pan, lightly pat to form a flat crust, bake for 25 min. until lightly browned.
Reduce oven temp to 350.
Spread met, veg and cheese over hot potatoes.
Whisk eggs and milk together till frothy, pour over all and bake an additional 25-30 min. til set.
No salt needed, but if you opt not to use the pepper jack cheese, put in about 1/2 t. black pepper.
You may also sprinkle paprika on top if you wish.
