Grilled Corn and Black Bean Salad

Ingredients

  • 2 ears corn, husks and silk removed
  • 2 Tbsp. olive oil + more for brushing corn
  • 1 Tbsp. lime zest
  • 2 Tbsp. fresh lime juice
  • 1/2 Tbsp. Tabasco sauce
  • 1 tsp. salt
  • 1/2 tsp. ground cumin
  • 1 can (15.5 oz.) black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 2 Tbsp. chopped fresh cilantro

Preparation

Step 1

Brush the corn with olive oil and grill until done, turning often. Set aside to cool a bit. Standing corn on end, slice off the kernels.

In a small bowl, combine 2 tablespoons olive oil, 1 tablespoon lime zest, 2 tablespoons lime juice, Tabasco, salt and cumin.

In a large bowl, combine corn, black beans, onions and cilantro. Drizzle with dressing; toss to coat evenly.
