Pickled Eggs

Ingredients

  • 1 can beets
  • 1 cup vinegar
  • 1/4 cup water
  • 3 heaping scoops sugar
  • 1 dozen eggs, hard boiled

Preparation

Step 1

In a saucepan, combine juice from beets, vinegar, and water. Heat but do not boil. As the juice warms, add the sugar (one scoop at a time), stirring after each scoop. Heat and stir until mixed thoroughly. Remove from heat.

Peel the eggs. Place 4 eggs in a jar, followed by a layer of beets and some of the juice mixture. Continue layering until complete. Place in refrigerator overnight.
