Ingredients
- 1 pound pasta (whole wheat is best)
- 8 tablespoons flour
- 4 tablespoons butter or margarine
- 1 pound Velvetta (block or shredded but block is creamier)
- 2 cups co-jack cheese, shredded
- 4 cups mozzarella cheese, shredded
- 3 cups milk
- 1 tablespoon nutmeg
Preparation
Step 1
Preheat oven to 400° F.
In large saucepan, cook the pasta per directions; drain.
In medium to large sauce pan on medium heat, mix the flour and butter to create a rue. Add the milk, salt, and pepper. Stirring constantly, cook the white sauce until thickened. Add the Velvetta and co-jack cheeses; stir until melted. Pour the cheese sauce over the pasta. Add 2 cups mozzarella and stir to coat.
Bake for 20 minutes. Stir. (If crispy/crunchy macaroni is desired, turn heat to broil.) Top with the remaining 2 cups mozzarella. Continue to bake for another 10 minutes or until desired crispness.
