- 2 lbs ground chicken
- 1/2 cup diced peppers
- 1/4 cup diced red onion
- 1/2 tsp cumin
- 1/2 tsp garlic salt
- 1/2 tsp southwest seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 cup nutritional yeast ( optional, but nice)
- 2 eggs
Throw all ingredients in the bowl of a stand mixer fitted with a paddle attachment. Mix on low for a few min, until all the ingredients come together, and the egg is thoroughly mixed in.
Pre heat oven to 350. Line a baking sheet with foil sprayed with pam.
Using a half cup measuring cup, measure out 1/2 cup portions of chicken mix. It is wet, sloppy and messy, so it is best to have your pan ready to go. you can transfer the burgers straight from the cup to the pan, or you can put them in your hand and round them out a bit. I got 9 large burgers from this. Each burger is about 4oz.
Bake for 30 min, then check. Burgers are done when the hit 170 degrees on thermometer. If you like me, and do not have one on hand, cut open the burgers, make sure the center is HOT and not raw.
Allow burgers to sit 5min on the pan before serving. Serve with guacamole, salsa or other toppings.
