Ingredients

  • 3 medium beets
  • 2 carrots
  • 1 chopped onion
  • 2 2/3 cups boiling water
  • salt
  • 900 ml Campbell's beef broth
  • 1 cup cabbage
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 6 tablespoons sour cream

Preparation

Step 1

Peel then shred beets and carrots, chop onion, simmer, covered with 2 2/3 cups boiling salted water and beef broth for 20 minutes. Add cabbage and butter, simmer uncovered for 15 minutes. Stir in lemon juice. Serve hot or chilled with a tablespoon of sour cream in each bowl.
6 good size servings.
