- 1 quart rhubarb
- 1 1/3 cup sugar
- 2 tablespoons shortening
- 1 egg
- 1 cup flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 1/2 teaspoon vanilla
Mixed rhubarb with 1 cup of sugar place in a greased baking dish and sprinkle a pinch of salt over the rhubarb.
Cream the shortening and 1/3 cup sugar, add a beat well.
Sift together flour, baking powder and salt.
Add milk to cream mixture add vanilla and pour over rhubarb.
Cover and bake at 350° for 40 minutes; uncover and bake 10 minutes longer or until the rhubarb is tender.
