Ingredients

  • 6 tbsp flour
  • 1/2 cup vegetable oil
  • 6 cloves chopped finely
  • 1 cup diced onion
  • 1/4 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 2 lbs shrimp peeled and deveined
  • 1 (8oz)can tomato sauce
  • 2 qts chicken stock
  • 1 lb crabmeat
  • 1 cup chopped parsley
  • 1/2 tsp thyme
  • 3 bay leaves
  • 1 lb frozen okra
  • 1/2 pint oysters with juice
  • salt and pepper
  • Worcestershire sauce
  • Tabasco

Preparation

Step 1

Make a Roux with flour and shortening
add garlic, onions, bell pepper, celery, and bay leaves and cook until transparent.
add okra and stir until it loses it's "stringyness"
add shrimp and tomato sauce and simmer for 10 minutes.
stir in chicken stock and blend well.
Add all other ingredients (except crab meat)and cook 1 hour.
Stir in crab meat and season to taste with salt, pepper, Worcestershire, and Tabasco.
Serve over white rice and garnish with chopped parsley and green onions.
