Ingredients

  • 12 oz. spaghetti
  • 1/2 yellow onion, chopped
  • 1 garlic clove, chopped
  • 1/2 c. Parmesan cheese, grated
  • Salt and Pepper to taste
  • 2 T. olive oil
  • 5 oz. bacon, diced
  • 3 eggs
  • 1 1/4 c. heavy cream
  • Fresh basil, chopped to garnish

Step 1

Cook pasta according to package directions. While pasta is cooking, heat oil in skillet and cook onion and bacon until tender. Stir in garlic and cook for another two minutes. Beat eggs in a bowl; add cream, salt and pepper. Add Parmesan cheese last and stir. Stir cream mixture into skillet with onion and bacon and cook over low heat until heated through. Drain pasta, reserving 1 c. of starchy cooking water, and place in a large serving bowl. Pour sauce over pasta and toss. Serve garnished with basil.
