Ingredients

  • 1 lg sweet potato, peeled & cut into lg pieces
  • 1 c all purpose or whole wheat flour
  • 1 t ground cinnamon
  • 2 & 1/2 t raw or brown sugar
  • 1 T butter

Preparation

Step 1

Place yam in a pan, cover with water and boil til soft. apx 15 minutes. Drain puree with 2 T of water. Measure out 1 cup of puree to use.
combine flour, salt , cinnamon and sugar.

cut butter into the flour mixture until it resembles coasrse meal. Add pureed yam and blend well. Gather the bough into a ball. Wrap into wax paper and chill for 30 minutes.

Divide the dough into 2 equal portions for rolling. On a well floured surface rool to about 1/8 " thick. cut into 2 X 3" squares prick each one in 3 places with a fork. Transfer onto an ungreased baking sheep.

Bake at 325 for 20 minutes. Turn the crackers and continue baking for another 5-10 minutes or untl golden brown. Remove any crackers that brown before the others. Be Careful not to overbake. Cool them on a rack
