Ingredients
- 4 thick strips of bacon, thinly sliced
- 1 large white onion, thinly sliced
- pinch of sugar
- salt and pepper
- 6 scallions, thinly sliced
- 1 tsp capers
- 1/2 cup fresh parsley
- grated zest of 1/2 of lemon
- 1/4 cup EVOO
- 1/3 cup creme fraiche or sour cream
- 1 lb frozen pizza dough, thawed
- all purpose flour for dusting
Preparation
Step 1
1. Preheat oven to 450. Cook bacon in large skillet over medium heat, stirring from time to time, until browned and crispy. Transfer to paper towels to drain, keep warm. Add onion slices to drippings in skillet, sprinkle with sugar and season with s&p. cook until light brown and tender, approx 5-7min. Taste for seasoning
2. Combine scallions, capers, and parsley in food procesor. Add s&p to taste and 1/2 of lemon zest, pulse gently to chop and blend. Turn processor on and add oo through top in steady stream. Transfer scallion pesto to a bowl; set aside.
3. In small bowl, whisk creme and remaining zest until smooth. Season with s&p.
4. Roll the dough into 8x14 rectangle on a lightly floured surface. Roll dough onto pin and unroll onto parchment lined baking sheet. Bake in center of oven until golden brown, approx 10-12 min.
5. Spread creme mixture on crust, dot with onions and bacon drippings from ban. Sprinkle bacon and pesto. Slice and serve.
