Corn and Potato Chowder

Ingredients

  • 1-2 Tbsp of olive oil or pam
  • 4 cloves of garlic
  • 1/2 medium onion
  • 1 green onion
  • 1 potato chopped into small cubes
  • 1 bag frozen corn, or 4 ears of fresh
  • 3 cups of chicken stock
  • 1.5 cups of fat free half and half or evaporated skim milk
  • 3-4 Tbsp of corn starch dissolved in 1/4 cup stock (slurry)

Preparation

Step 1

Saute garlic, onion, and green onion.
Add chicken stock and bring to a biol
Add potatoes, simmer until tender
Mash potatoes, add corn and simmer for 5-10 minutes
Add slurry and 1/2 and 1/2
Adjust thickness with slurry
Salt and pepper
