Chicken Noodle Soup

Ingredients
- 3 Large Onions
- 3 Stalks Celery
- 2 Medium Carrots (diced very small)
- 1/2 lb Margarine
- 11/2 C Flour
- 3 Qts Chicken Stock
- 1 pt Half & Half
- 1 Whole Chicken (cooked & diced)
- 16 oz pkg Medium Noodles (cook at directed)
- Salt & Pepper to taste

Preparation
Step 1
Chop onions, celery and carrots very fine. Cook in a little water for 20 min or till tender.
Melt butter & blend in flour thoroughly.
Heat stock & cream and add very gradually to butter/flour mixture. Stir till all lumps disappear and it thickens.
Add vegetables, water and all, stir and cook over low heat for 10 min. Season with Salt & Pepper, add Chicken & Noodles.
Makes 4 1/2 quarts
