Ingredients

  • 3 Large Onions
  • 3 Stalks Celery
  • 2 Medium Carrots (diced very small)
  • 1/2 lb Margarine
  • 11/2 C Flour
  • 3 Qts Chicken Stock
  • 1 pt Half & Half
  • 1 Whole Chicken (cooked & diced)
  • 16 oz pkg Medium Noodles (cook at directed)
  • Salt & Pepper to taste

Preparation

Step 1

Chop onions, celery and carrots very fine. Cook in a little water for 20 min or till tender.
Melt butter & blend in flour thoroughly.
Heat stock & cream and add very gradually to butter/flour mixture. Stir till all lumps disappear and it thickens.
Add vegetables, water and all, stir and cook over low heat for 10 min. Season with Salt & Pepper, add Chicken & Noodles.

Makes 4 1/2 quarts
