Ingredients
- 1 tbsp. olive oil
- 1 cup uncooked long grain rice
- 2-3 cups beef broth
- 1 (8 oz.) can tomato sauce
- 1 (4 oz.) can diced green chiles, drained
- 1 tsp. ground cumin
- 1/2 tsp. seasoned salt
- 1/4 cup sliced onion, optional
Preparation
Step 1
Heat oil in a saucepan over medium-high heat. Add rice and saute until light brown. Stir in broth and tomato sauce. Bring mixture to a boil; reduce heat to low. Stir in chiles, cumin and salt. Cover and simmer until all liquid is absorbed and rice is tender, adding more broth, if neessary. Add sliced onion, if desired, and cook until onion is tender.
This recipe can be easily doubled or tripled as needed to serve a crowd.
