Bruschette

Aunt Sherry introduced this recipe to me. I tweaked it a bit, using italian dressing instead of balsamic vinegar. It's always a hit at parties.

Ingredients

  • 6

    Roma Tomatoes, chopped

  • 1

    pac fresh Basil, chopped

  • 1/2

    cup shredded Parmesan cheese

  • 1/2

    cup Girard's Italian dressing

  • Salt, to taste

  • 2

    French baguettes

  • 2

    Tbsp olive oil

  • 1

    tsp minced garlic

Directions

In a medium bowl, mix together tomatoes, basil, cheese, dressing, and salt. Chill for at least 30 minutes (the more the better). In a small bowl mix olive oil and garlic together and heat in the microwave for 15 seconds. Cut baguettes on the diagonal and brush with the olive oil mixture. Then broil in the oven until golden. Serve a spoonful of the tomato bruschetta on top of a baguette slice and enjoy.
