Ingredients

  • 1/8 tsp pepper
  • 1/8 tsp paprika
  • 2 Tbsp all purpose flour
  • 4 boneless chicken breasts
  • 2 Tbsp oil
  • 2 med sweet onions - quartered
  • 1 lb potatoes - quartered
  • 8 oz baby carrots - bite size
  • 1 1/2 cup chicken broth
  • 3 Tbsp lemon juice
  • oregano

Preparation

Step 1

heat oven to 350*.
combine black pepper, paprika and flour.
coat the chicken with the mixture.
Heat oil in 12 inch oven safe skillet (or dutch oven) over medium high heat.
Add the chicken and cook until its well browned on all sides.
Remove chicken from the skillet.
Add the onions and potatoes to the skillet and cook for 5 minutes.
Add the carrots, chicken broth, lemon juice and oregano and heat to boil.
Return chicken to the skillet and cover.
Bake at 350* for 20 minutes. Uncover and bake for 15 minutes or until the chicken is cooked through and the veggies are tender.
