Ingredients
- 1 Tbs. olive oil
- 1 medium yellow onion, chopped (1 1/2 cups)
- 1 10-oz. bag frozen collard greens, thawed and drained
- 10 large eggs, beaten
- 1/3 cup grated Parmesan cheese
Preparation
Step 1
Preheat oven to 400°F.
Heat oil in ovenproof 10- to 12-inch skillet over medium-high heat. Add onion, and sauté 5 minutes, or until translucent. Push onion to one side of pan, and add collard greens. Cook 5 minutes, then stir together greens and onions.
Stir eggs into collard mixture. Cook
5 to 7 minutes, or until edges are set. Sprinkle with Parmesan cheese.
Transfer skillet to oven, and bake
10 minutes, or until egg mixture is completely set. Cut into 6 wedges.
