Chipotle Ketchup

Ingredients
- 6 cloves of roasted garlic, mashed
- 2 Tablespoons butter
- 1/2 onion, roughly chopped
- 1/4 cup brown sugar
- 6 Chipotle peppers in adobo sauce
- 16 oz can peeled tomatoes
- 1/4 cup red wine vinegar
- salt & pepper to taste
Preparation
Step 1
In a medium saucepan melt butter over medium heat. Add onions to butter, caramelize onions.
When onions start to brown stir in brown sugar. Cook until bubbly and dark brown.
Add garlic mash, stir to combine. Add peppers and tomatoes (juice & all). Cook until no moisture remains (about 30 minutes), stir occasionally.
Transfer mixture to blender and puree until smooth. Add vinegar to puree. Salt & pepper to taste.
