Duke's Mayonnaise Baked Potato Casserole

Ingredients

  • 4-5 cooked potatoes, cut into chunks
  • 3/4-1 cups Duke's Mayonnaise
  • 1 cups shredded cheddar cheese
  • 2-3 scallions, chopped
  • salt and pepper to taste
  • 3-4 bacon slices raw (they cook in oven on top of potatoes)

Preparation

Step 1

Spray baking dish with nonstick spray. Mix all ingredients together and place into 8" or 9" pan. Cut up slices of raw bacon and arrange on top of mixture. Do not cover dish. Bake at 325°F for 45 minutes to 1 hour, or until bacon is crisp.
