Ingredients

    cup all-purpose flour

    cup yellow cornmeal

    tsp baking powder

  • 1/4

    tsp salt

  • 1/2

    cup shredded sharp cheddar

  • 1/2

    cup low-fat sour cream

  • 1/4

    cup thinly sliced green onions

  • 1

    (8 3/4 oz) can cream-style corn

  • Dash of hot sauce

  • 1

    large egg, lightly beaten

Directions

Heat oven to 375. Combine flour and next 4 ingredients in a large bowl. Combine cheese and remaining ingredients in a small bowl; stir with a whisk. Add to flour mix; stir just til moistened. Divide batter evenly among mini-muffin cups coated with cooking spray. Bake 10 minutes or til golden. Cool in pan 2 to 3 minutes.
