Rice pudding with poached pears and maple syrup

Ingredients

  • Poached pears
  • 3 ripe pears
  • 1 litre water
  • 200 ml sugar
  • 1 stick cinnamon
  • 1 tsp ground five spice
  • Rice pudding
  • 300 g short grain rice (arborio)
  • 1 litre milk 3.25%
  • 200 ml cream 35%
  • 1 vanilla bean cut lengthwise
  • 200 g sugar
  • 20 g butter

Preparation

Step 1

Poached pears
1. Peel pears.
2. In a casserole, bring water, sugar and the spices to boil.
3. Place peeled, whole pears in casserole, and gently poach pears until tender.
4. Refrigerate pears in poaching liquid for 2 hours until chilled, or overnight.

Rice pudding
1. Wash the rice in cold running water, then drain.
2. Combine milk and cream in a pot on the stove, bring to gentle boil.
3. Add rice, vanilla, sugar and the butter to the cream and milk mixture. Lower the heat to minimum and slowly cook the mixture for 1 1/2 hours mixing occasionally.
4. The rice is cooked when it is still firm, and the liquid has evaporated to a creamy but not too thick consistency.
5. Remove from heat, chill rice pudding in refrigerator for 3 hours.

Assembly
1. Dice pears and stir into rice pudding.
2. Spoon rice pudding into smaller bowls.
3. Drizzle with maple syrup.
4. Add small fruits for garnish if desired.
