Orzo Salad w/ Zucchini & Feta

Ingredients

  • 8 oz orzo (1/2box)
  • 3 TBL olive oil
  • 3 TBL white wine vinegar
  • 1/2 tsp crushed red pepper
  • kosher salt & black pepper
  • 1-1/2 LBS small zucchini (3 to 4), cut into thin half-moons
  • 8 oz feta, crumbled (2 )
  • 1/4 C chopped fresh dill

Preparation

Step 1

cook orzo according to pack directions
drain & run under cold water to cool

meanwhile, in lg bowl, combine oil, vinegar, red pepper 3/4 tsp salt 7 1/4 tsp pepper

add zucchini & let marinate, tossing occasionally, for 20 min

add orzo, feta & dill to zucchini mixture & toss to combine

MAKE THE SALAD (WITHOUT THE DILL) UP TO A DAY IN ADVANCE, REFRIGERATE
