Onion & Pepper Relish - Georgia Style

Ingredients
- 5 - 14.5 oz. cans petite diced tomatoes
- 6 bell peppers
- 6 C. Sugar
- 2 T. Salt
- 2 t crushed red pepper flakes
- 6 Jalapeño Peppers with seeds and ribs removed
- 3 vidalia sweet onions
- 2 cups white vinegar
- 2 small boxes powdered pectin

Preparation
Step 1
Chop all vegetables - Food Processor
Mix everything together, except the pectin, in a large pot. Bring to a boil that can't be stirred down and reduce and simmer for about 1 hour. Add in the pectin and boil for 1 minute.
Pour relish into hot sterilized half pint jars leaving about 1/2 inch head room. Seal and process for 15 minutes.
